Position: Demi Chef de Partie – Pastry Kitchen
Key Responsibilities:
- Assist the Pastry Chef in preparing and producing a variety of baked goods, desserts, and pastries according to established recipes and standards.
- Execute the production of pastry items, including cakes, pastries, bread, and confections, ensuring consistency, quality, and presentation are maintained.
- Support the Pastry Chef in overseeing the day-to-day operations of the pastry kitchen, including food preparation, baking, decorating, and plating.
- Follow standardized recipes and portion sizes to meet guest expectations and maintain cost control measures.
- Monitor inventory levels of pastry ingredients and supplies, requisitioning items as needed to maintain stock levels and minimize waste.
- Ensure compliance with food safety and sanitation regulations, including HACCP guidelines, to maintain a clean and hygienic work environment.
- Assist in training and supervising junior pastry staff, providing guidance on techniques, recipes, and kitchen procedures.
- Collaborate with other kitchen departments, such as the main kitchen and banquet kitchen, to coordinate pastry production for various outlets and events.
- Participate in menu planning and development, contributing creative ideas for new pastry offerings and seasonal promotions.
- Adhere to Rotana Hotels’ standards of excellence in pastry production, aiming to exceed guest expectations and enhance the overall dining experience.
Qualifications:
- Diploma or degree in Culinary Arts, Pastry and Baking, or a related field.
- Minimum of 2-3 years of experience in a pastry kitchen, preferably in a hotel or upscale restaurant setting.
- Solid knowledge of pastry techniques, baking methods, and dessert presentation.
- Proficiency in pastry production, including cake decorating, chocolate work, and sugar crafting.
- Understanding of food safety and hygiene practices, with certification in HACCP or food handling safety.
- Strong attention to detail, creativity, and passion for pastry arts.
- Effective communication and teamwork skills, with the ability to work collaboratively in a fast-paced kitchen environment.
- Flexibility to work various shifts, including evenings, weekends, and holidays as required.
