Position: Kitchen Sous Chef-in-Charge

Key Responsibilities:

  • Assist the Executive Chef in overseeing all aspects of the kitchen operations to ensure high-quality food production and service standards are maintained.
  • Supervise and coordinate the work of kitchen staff, including chefs, cooks, and kitchen assistants, to ensure efficient workflow and adherence to recipes, portion sizes, and presentation standards.
  • Lead by example in preparing and cooking a variety of dishes, ensuring consistency, flavor, and quality are maintained at all times.
  • Monitor food inventory levels, order supplies, and manage food costs to minimize waste and maximize profitability.
  • Implement and enforce hygiene and sanitation standards in the kitchen, following HACCP guidelines and local health regulations.
  • Train and mentor kitchen staff, providing guidance on culinary techniques, safety procedures, and teamwork to enhance their skills and performance.
  • Collaborate with the Executive Chef to develop new menu items, seasonal specials, and promotional offerings to meet guest preferences and market trends.
  • Conduct regular inspections of kitchen equipment, ensuring proper maintenance, cleaning, and safety procedures are followed to prevent accidents and equipment breakdowns.
  • Assist in the development of departmental budgets, forecasts, and financial reports, monitoring expenses and revenue to achieve budgetary goals.
  • Maintain effective communication channels with other departments, including Food and Beverage, Purchasing, and Stewarding, to ensure smooth coordination and cooperation.
  • Uphold Rotana Hotels’ standards of excellence in food quality, presentation, and service, striving to exceed guest expectations and enhance the overall dining experience.

Qualifications:

  • Diploma or degree in Culinary Arts, Hospitality Management, or related field.
  • Minimum of 5 years of experience in a culinary leadership role, preferably in a luxury hotel or upscale restaurant environment.
  • Proven track record of culinary creativity, menu development, and successful kitchen management.
  • Strong leadership and team-building skills, with the ability to motivate and inspire a diverse team of culinary professionals.
  • Excellent knowledge of international cuisine, culinary techniques, and food safety standards.
  • Proficiency in menu costing, inventory management, and budgetary control.
  • Effective communication and interpersonal skills, with the ability to interact professionally with guests, colleagues, and suppliers.
  • Flexible schedule, with the willingness to work evenings, weekends, and holidays as required.
